2 Tablespoons butter 1/2 cup chopped onions

2 cloves garlic, minced

2 Tablespoons all-purpose flour

2 teaspoons snipped fresh rosemary (or 1/2 teaspoon dried)

1 3/4 cups whole milk

4 cups sliced potatoes, peeled

1/4 teaspoon salt

1 cup smoked gouda cheese, shredded

Melt butter in a medium saucepan, sauté onions and garlic until tender.  Stir in flour and rosemary. Add milk all at once. Cook stirring until tender but not brown
